The Ongoing Saga of a Girl and Her Scale


I promised I would write something in relation to the continuous battle that many of us have with our weight, so here it is.

As I wrote in my other blog, food is a burden that we all have to bear. We simply have to eat. There is no way around that. If we don't eat, we don't function and then we die. It's just the way it is.

Personally, I really do like eating. I like the flavors, aromas and textures of food. I like combinations of things that please the palate and give me a sense of satisfaction—even if only temporarily.

But I like to eat the "wrong" foods and I like to eat way too much of those "wrong" foods.

I think that many of us are discouraged because the foods we enjoy the most are typically the ones that are no good for us! At least that is how it feels.

I have been exploring different food options and finding that some of the things that are actually good for me do taste good, too.

You might be asking yourself, "Like what, Karin?"

Well, let me give you an example. Quinoa (pronounced Keen-wa). I always looked at that bag of little beady looking stuff on the shelf when I went shopping and wondered what it was. I had heard it was "good" for me, so I figured it would taste horrible. Not true. It tastes pretty bland actually, but that is when we can take natural spices and give that baby some flavor!

Another thing was Steel-cut Oatmeal. What in the world is that?

Well, it is just the way it is cut and is basically in its "whole" form, not smashed out and processed.

I didn't think I would like it, but when I add (uncooked) it to greek yogurt and frozen blueberries, it's like having a parfait! It tastes great and it is better for me that most other "treats."

I bought a recipe book that I will be sharing more about on my other blog—diabeteshealthnuts.com. It is a plant based recipe book and it has tons of quick and easy recipes for single serve or family size!

This is where I learned about ways to prepare Quinoa.

There is so much that we don't know about what all the processing does to our food and then in turn to our bodies. It is important to ever-grow your knowledge about the food you eat.
